Low-So Broccoli Tater Tots

You may be skeptical, you may be amazed. But either way, behold the broccoli tater tot! (I think I just won motherhood) But before we get into specifics, let me explain something: I’m not a believer of “hiding” vegetables from my daughter or a green-fearing person of any age. Low-Sodium Turnip Tots

Sometimes good things happen to old vegetables. Like these baby turnips that were sadly wilting away in my refrigerator, getting mushier with every passing day that they were ignored for things like kale and ground pork and life in general. But as I was about to throw them towards their composite demise, I realized that the softened texture and small round size made for the perfect tater tot substitute. Broccoli Crusted Fish Sticks

I’ve been on a major broccoli kick lately. And my six year old self is in total shock. But my thirty-something self is totally blown away by broccoli’s chameleon like capabilities. Crunchy Cornmeal Broccoli

For all those broccoli haters and naysayers, I’m about to seriously rock your world. And change snack time forever. FOREVER. In doing some research on how to make truly scrumptious turnip fries (this is a thing), I discovered the power of mixing vegetables with a simple cornmeal coating, thanks to the gorgeous blog My New Roots. Low-So Green Sauces

Pardon the interruption of Salt-Free Salt month. But I though, it being St. Patty’s day and all, I’d bring you something green. Well two things: First, my Low-So Spinach Sauce. And then, my Kale Pesto French Toast. They are both superhero condiments of edible proportions. So let’s start with spinach. I love this sauce not just for it’s velvety texture. Nor its tangy taste.
