Creamy Chicken Curry

Pack your knives and hop into your time machine, because we are heading back to 2008. It’s time for another installment of the Biting Mr. Bittman, series and today we take a recipe from Mark’s Diner’s Journal column, in which he remixes an Indian classic – Creamy Chicken Curry. Before I launch into the recipe for this dish, I will take a second to add a small disclaimer: I’ve only eaten real chicken curry once before in my life, and that was almost eight years ago after a few bottles of beer (I was in Europe, so it was legal). So, I […]

Welcome to Sodium Girl

Okay, don’t panic. I know that you come to this blog to see pretty pictures of food and to find mind-blowing low sodium recipes. And today, you open your inbox to find a picture of a black dress. “What is this about?” you say, furiously slamming your cold coffee on the table. Well, I can promise you that I haven’t totally lost my culinary mind and I do not plan on giving you a recipe for stewed cocktail dress. Nor will this blog transform into a barbie-doll site about fashion, or the fashion I wear while enjoying low sodium food. […]

Low-Sodium Yakisoba

For the second installment of the new, Biting Mr. Bittman series, I figured I should stop fooling around, take a big risk, and attack a recipe that relies heavily on salt. You know, just in case Mr. Bittman is actually reading this blog–good morning, Mark!–and wants some proof that this Sodium Girl really knows how to cook everything, without salt. So I scoured his recent recipes for a true challenge–searching for a dish that usually comes in a take-out box and that uses a lot of soy sauce–basically, something of Asian origin. And after sifting through asparagus pesto and laid-back […]

Salads, Dressed Up

Here’s the thing about salads. On the most basic level, I find them boring. I’d much rather order (and eat) a large bowl of steamed chard than graze upon a bed of butter lettuce. But I have to apologize, for this is a gross stereotype. Not all salads are made equal. And as I’ve learned from watching various episodes of Top Chef, making an outstanding salad is one of the most difficult accomplishments on the cooking scale. So why do I bring up this leafy subject? Well, there are two salads in my life that have almost brought tears to […]

Biting Mr. Bittman

I’d like to begin this post with an introduction – well, two introductions to be exact. First, let me present to you a new, hopefully weekly section of the blog called “Biting Mr. Bittman.” If you haven’t met him before, then here is my second introduction. Mr. Bittman, or better known to close pals as El Marko – actually, I just made that up, but its a great nickname and he should consider using it – is a pretty famous food writer, if you consider the New York Times a “popular” publication. He pens the food columns Bitten (how clever) and The […]

Meatloaf Birthday Muffins

As you may recall, last year I decided to wake up before the sun rose and make my Man Friend a freshly-baked batch of birthday cupcakes. But these were no ordinary cupcakes. There was no buttercream frosting nor chunks of chocolate hiding within the batter. These were something special, because that’s what birthday cupcakes are all about – celebrating the extraordinary. These were savory molds of dough filled with cheddar cheese, bacon, and beer. These, my friends, were Beef Cakes. And since I’m a girl of tradition (insert my mother rolling her eyes here), I decided that, 365 days later, […]

From Scratch: Chicken Butchery Class

Here’s my personal opinion: when you cook something from scratch, it will by any account be healthier than something you buy that is prepared. When you are cooking from start to finish, you control everything about your ingredients – their place of origin, the method of cooking, and the type of seasoning. As a low sodium cook, I try to continually expand my culinary skills by taking cooking classes so I can make dishes (that are usually salt laden) in the comfort of my own home. I find that the more I know about the food, the more types I […]

Hot Potato

There are two things for which I always have an appetite: 1) crispy, fried potatoes and 2) my future mother-in-law’s curry chicken salad. So when food52.com posted their most recent challenge for the “best potato salad,” I knew exactly what I wanted to make: a Low Sodium, Hot Potato Salad with Curry Dressing. Since the potatoes are the true star of this dish, I decided to give them some extra special care by cooking them twice – first, a quick boil to soften them and second, a long roast in the oven to give them crunch. As for the other […]

Clean Up on Aisle Four

You may be wondering, what is that?  Is that Sodium Girl’s worst nightmare?  A kitchen covered in ants?  Thankfully, it is not, or else I might have left the house never to return again.  I have a serious fear of the little guys.  So small.  I just don’t trust them. While this scene is not my worst nightmare, it is my biggest pet peeve.  A huge spill during a hurried cooking session.  With a quick twitch of the hand, I turned this cute little 1/4 cup of quinoa into a sea of grains bouncing all over my linoleum floor. In […]

Healthy Foods

Meet chard.  It is a beautiful, leafy green vegetable whose stems come in an array of colors, from red, to white, to gold, to even rainbow. Chard is super healthy for you and an excellent source of vitamin A and iron. It can be sauteed, steamed, even baked and I throw it in everything from pasta to frittata. The leaves have a slightly bitter, salty taste (which is actually a plus for a low sodium cook as it provides savory notes, naturally). The stems have a bit more of a buttery flavor and add a great a great crunch to […]
