Low-Sodium Spicy Green Beans

Do you remember that show, My Two Dads? It was about two guys (duh) raising a daughter. Kind of like Three Men and a Baby, but with a lot less Ted Danson and a lot more of a dude that looks like George Michael. I have two dads now. My father and my father-in-law. Neither looks like Ted Danson nor George Michael. But they both like each other. A lot. This obviously wasn’t a requirement for my matirmonial arrangement, but it really worked out for the best. They talk politics and sports, burgers and beer. And both love to find […]

Low-Sodium Labor (slash, Memorial) Day & Baked Garbanzos

(Before you read, be warned: this post mentions Labor Day many times which, as you may have noticed, should actually be Memorial Day. But because I believe in embracing mistakes, I’m leaving it. So please, enjoy. Even if it’s a few months early) Do you know why we celebrate Labor Day? Neither do I. But I do know that I love three day weekends, especially those filled with picnics, potlucks, and BBQs. So here’s a recipe for a crispy snacketizer — salt-free’d from Heidi Swanson’s Super Natural Everyday vegetarian food bible –which will keep you and your friends satisfied between […]

Carrot Soup By Color

When introducing a carrot to your friends, what do you tell them? Do you begin by describing it as healthy? A betacarotene and fiber-filled vegetable? Peas’ better half? Or do you tell your best buds stories of how this wonder root likes to be the center of attention in salads and slaws; how, at times, yes, they can be loud and crunchy, but mild and gentle when the moment calls for it; and of course how they’re so flexible to your silly whims, ready for any culinary adventure you decide to throw at it. Broiling? Carrot says lets do it. […]

Thank You Krispies

Sometimes you want to say thank you but words just don’t seem to cover it. And for those times when you can’t muster up the right verbs and nouns and adjectives and conjunctions to show your gratitude, all you need is sodium-free marshmallows, wheat cornflakes, dried blueberries, and coconut oil. A baking sheet and parchment paper will also prove quite helpful. A few moments of melting followed by thirty minutes or so of setting and you have an edible gesture of appreciation (a.k.a. low-sodium krispy treats). With all the gooey decadence of the original recipe, without any of the sodium, […]

Low-So NOJO Avocado Salad

Picture this: The dim light of bulbs and moon beams bounces off the recently rained streets of San Francisco’s cultural axis point: Hayes Valley. And tucked away from post-Symphony rush hour and late-night staples sits NOJO, a Japanese restaurant that makes traditional cuisine with careful hands. But no California rolls. Meaning “farm,” Nojo combines the art of yakitori (things on sticks) with izakaya (traditional bar food) and of course, fresh local ingredients. Like crisp asparagus topped with pink easter radishes and a hen-fresh egg. Or chewy duck neck sprinkled with the chef’s personal stash home-dried and crushed cayenne pepper. An […]

Low-Sodium Red Lentil Soup

I’ve got a case of the stressies today. The kind where the to-do list just never seems to get to-done. Where the laundry piles up as soon as I fold the last load. The papers I meant to file in 2011 are now buried under the ones I mean to file in 2012. I’m still answering emails from last November. And let’s not even talk about the ones that have come in since then. It seems like the only thing I’ve been able to finish in a timely fashion is the first book of the Hunger Games. (So good) And […]

2012 Love Your Heart Recipe Rally

Let’s begin with the facts and the numbers, because that’s a very good place to start: The recommended daily sodium intake for a healthy American is 2,300mg, which equals 1 teaspoon of salt The recommended daily sodium intake for over 50% of adults (due to health problems, age, and other needs) is 1,500mg, which equals just over 1/2 teaspoon of salt Nine out of 10 Americans (that’s 90%) eat more than the recommended daily intake of sodium, averaging over 3,300mg (and if you really consider the soy-sauced sushi, chorizo burrito, and milk swamped cereal…that number clilmbs even higher) More than 800,000 […]

On Top of Low-Sodium Spaghetti Squash

I really love a deeply meaty pasta sauce. There is something about lusciously simmered tomatoes mixed with browned chunks of beef (or pork in this case) and a sprinkle of fresh herbs that is just irresistible. To the point that I would almost rather eat the entire pot of pasta sauce rather than deal with those pesky noodles getting in the way. Waiting for them to boil is just too much. A spoon will do. Thank you. But when you add the delicate strings of spaghetti squash, which turn and tumble around a fork just like spaghetti should, suddenly, the […]

Low-Sodium Cauliflower Steaks

So let’s say you’re having a big group over for dinner and you plan on making this: But we’ll get back to the beef another time. Because, let’s say that you or one of your guests could not eat the meat you see above. What do you do? The answer is cauliflower steaks. Yes, a hearty main made from a small head of cauliflower that is chopped into thirds to create slabs of non-meat steakery. Trust me, vegetarians, vegans, and those watching their sodium and protein intake will appreciate the creativity. They will also appreciate the smokey seasoning that you rub […]

Low-Sodium Winter Comforts

Here are the things I learned this week: 1) Although I love being barefoot or in sandals, rain boots are definitely the right choice when it’s raining. 2) Madonna still totally rocks. Like, seriously. 3) Steaks can be made out of cauliflower (see: Thursday’s post). 4) Curling up on the couch with something warm (i.e. a blanket, freshly baked bread, breakfast for dinner, and soup) is the perfect way to ward off chilly weather. So below, find some of my favorite cozy, low-sodium recipes for when the temperature drops. Make one, two, or all three this week. And save your […]
