Edamame Education: The Basics

A few weeks ago, I was invited to speak at the Bay Area Association of Kidney Patients. I met some amazing folks… said a few things (http://www.vimeo.com/25442598)… and I even walked away with a nifty gifty basket of goodies from Trader Joes. Just polished of an entire bottle off salt-free balsamic vinegar. Thanks, Trader Giovinni! But beyond the chit chat and tchotchkes, I also left with some brand new ideas for low-sodium recipes. Because when I posed the innocent question, “what foods do you miss most,” these go-getters sure didn’t hold back. First, there was the tomato-less ketchup conundrum that, […]

Pasta Pretzel Bites

Um…wait…what? Pasta pretzel bites! I made pasta pretzel bites. I’m still not sure what you’re talking about. I’ve never heard of those before? I know, neither had I. Until I made them 15 minutes ago. Still lost. Basically, let’s say that you have a serving of leftover pasta. Like two day old noodles that are facing the grim reality that, most likely, they’ll have to be tossed away. It gives a low-sodium green god or goddess like yourself a bit of a heart attack. But what can you do? First, turn on your oven to 400 dg F. Then, pour […]

I’m Sorry Risotto

I didn’t have time today to go to the flower store. I didn’t want to bake you cookies or a cake, because we all know my track record when it comes to baking. And a simple note just didn’t seem like it would cut it. So to make up for the absent post on Monday, I made you this. Fava bean risotto made with fava bean stock. If you haven’t met a fava bean before, hold on to your hat. They look like a much larger, thicker, softer (faster, stronger) english pea pod; they happen to be in season; and […]

Big Love, Big News, Big Treats

Love food. Love others. But most of all, love yourself. That’s the message of today’s post and my attempt to tie three big topics together under one little photo of a chocolate covered quinoa treat. To begin, I wanted to give a quick update about next week’s “Love Your Heart Recipe Rally.” (BIG LOVE) Yes, the whole idea was a bit last minute, but amazingly, in just a few days, some wonderful bloggers – none of whom have any low sodium dietary restrictions – have joined the Rally and have agreed to take on the challenge of cooking food with […]

Cacciator-Me if You Can

On Saturday night, my mom and I decided to throw a little family love fest. With eleven relatives and one small dog in attendance, we decided to keep it casual. Nothing fancy. Just hearty food to beat the winter chill and good conversation. But when someone says the words “dinner party,” I have a hard time holding back. The hostess gene gets activated (I have five aprons that need wearing, for goodness sake) and I want nothing more than to give my guests a great eating experience. And if that means three hours of simmering meat, then that’s exactly what I’ll […]

Salt-Free My Recipe: Mama's Enchiladas

A few weeks ago, I received the following, lovely letter from Sodium Girl reader Cindra Fox: Dear Sodium Girl, I’m on a low-sodium diet to prevent complications from migraines. I’ve been on it for over a year now and have found a whole new world of food and flavor that I ignored back when I could just grab a burger at the closest drive-through. What I miss the most, though, is Mom’s famous enchiladas. I’m half-Mexican and we would make these at least once a week. Now it’s been over a year since I’ve had them. But here’s the catch: […]

Salt-Free My Recipe: Lobster-Less Corn Chowder

There is not much that can top the succulent, buttery-sweet taste of ocean’s prized gem, the lobster. But you better bet your low sodium pants that I was determined to try and find an unbelievably close substitution. Now, I want to say, unabashedly, before proceeding that this recipe is not only wonderful for people on a low sodium diet, but great for food-lovers who: (a) do not live near sea-faring towns with exceptional crustaceans, (b) blow up into a histamine-balloon when eating anything with shells, and (c) wish to save their cash for rent and not spend a fortune on […]

Hot Pockets

It is true that the easiest way to lower your sodium is to cut out the prepared, packaged items from your diet. But it is false that home-cooked meals, made from scratch, have to be costly, time-consuming, and exhausting to create. Now, I’m not saying your assumption is wrong, because many dishes, like making your own mole sauce, could put you into an ingredient-induced coma for weeks. But thanks to inventions like the slow cooker and immersion blender, you can make flavorful, low sodium meals in the time it takes to order a pizza. For this particular story, let’s just […]

Lemon Meringue Pots

Ok, before we even start this post, I have to ask.  Does anyone else see a baboon in the picture of the lemon meringue above?  Or perhaps Simba from the Lion King? It is kind of like a sighting of the Virgin Mary, but without any religious implications or unexpected media attention. But perhaps this is a forewarning of one, truly wild dessert…so with that in mind, off we go. For the Mom’s birthday dinner menu, I was given three simple, low sodium requests: (1) risotto cupcakes, (2) juicy lamb, and her ultimate, favorite dessert, (3) lemon meringue pie. As […]

The Last (Moroccan) Meal

No April Fool’s Day joke here, my friends.  This is truly the last of the recipes from the low sodium, highly organic, and super flavorful Moroccan feast.  May I introduce to you the evening’s piece de resistance: vegetable couscous and lemon, chicken tagine. I have to admit that, for a while now, vegetable couscous has been a quick-fix favorite of mine.  Couscous is very easy to cook and it is a wonderfully forgiving grain.  You can mix whatever veggies you have in your fridge with a few spices and a cup of couscous, and you’ve got yourself something hearty and […]
