Southwestern Quinoa Bowl

Right now, the world is filled with caramels, fruit loafs, chocolate covered what-nots, and sugar plum fairies. Everywhere I look, I see sweets and breads and sweet breads. And I’m definitely not complaining about this. It’s my favorite time of year and I enjoy every bite of it. But since the holidays bring with them a major candy and carb rush, it’s nice to find some balance in between all the parties and glasses of bubbles. And by balance I mean a Southwestern Quinoa Bowl, complete with homemade BBQ dressing. And blue corn chips. Yep, balance. It’s a lighter, healthier, more […]

Chinese Five Spice Quinoa Meatballs

When’s the last time you had an Chinese Quinoa Meatball? TRICK QUESTION! Because the answer is probably never, because I totally just made them up. (Please note: no official research was done to confirm this statement). So I guess the better question then is WHEN will you eat a Chinese Quinoa Meatball? Let’s just make that a resounding, SOON! Because these meatballs are the perfect metaphor for satisfying low-sodium living. They’re all about not just losing the salt and sodium, but replacing them with interesting, intriguing, and attractive tastes. Taking salty ducks and turning them into gorgeous low-sodium swans. Or […]

Quinoa Crusted Chicken

Let’s just get this out of the way. Wiener Schnitzel. (God bless you). It’s a silly name for a pretty simple dish: veal cutlets, pounded until they are Kate Moss skinny, dipped in egg and seasoned bread crumbs, and fried until golden brown. Because the meat is so thin, they cook up real quick. And because the outer layer is so crispy, they disappear real fast too. Which in my book equals a recipe for happy hosts and happier guests. And explains why this fried meat treat is the national dish of Austria — well done, Austria. But how do we […]

Lo-So January Week 4: Chelsea Salt-Free’s Her Very Own Recipe

The girl doesn’t need any introduction. So let’s just get to straight to words from Chelsea and week four of her heroic journey through the low-sodium world… Week Four has been marked by two milestones: entertaining Low-So style and branching out beyond Sodium Girl’s ravishing recipes to create my very own. Last weekend, I hosted a little fête for a friend’s birthday and really wanted to showcase some tasty low-so treats. Remember: I live below the Mason-Dixon Line. Three amigas of mine host an annual Bacon-Off (and, it’s incredible/one of my favorite days of the year). Sodium is alive, well, […]

Big Love, Big News, Big Treats

Love food. Love others. But most of all, love yourself. That’s the message of today’s post and my attempt to tie three big topics together under one little photo of a chocolate covered quinoa treat. To begin, I wanted to give a quick update about next week’s “Love Your Heart Recipe Rally.” (BIG LOVE) Yes, the whole idea was a bit last minute, but amazingly, in just a few days, some wonderful bloggers – none of whom have any low sodium dietary restrictions – have joined the Rally and have agreed to take on the challenge of cooking food with […]

Hot Potato

There are two things for which I always have an appetite: 1) crispy, fried potatoes and 2) my future mother-in-law’s curry chicken salad. So when food52.com posted their most recent challenge for the “best potato salad,” I knew exactly what I wanted to make: a Low Sodium, Hot Potato Salad with Curry Dressing. Since the potatoes are the true star of this dish, I decided to give them some extra special care by cooking them twice – first, a quick boil to soften them and second, a long roast in the oven to give them crunch. As for the other […]
