Jess Do It

As if one marathon wasn’t enough, my wonderful dream friend, Natty, decided to put on her running sneaks and tackle that 26.ridiculous mile New York course again this year. All in the name of Lupus research. All so that someday, people like me won’t have to feel tired, run-down, or kidney-less because of this chronic disease. While Natty ferry’d over to the starting line, the rest of us bundled up and leisurely walked across the Island, bundled up of course, to await her passing. And as we slowly strutted our way uptown, I reflected on this wonderful dream friend of […]

Low-Sodium Cabbage Spring Rolls

What do you crave? Burgers? Enchiladas? Pate? If your answer was spring rolls, well then you’re in for a real treat today. But before we dive into the low-sodium wrapping and rolling, let’s back up and take a look at why the traditional spring roll may pose a sodium problem. Spring rolls can come in both fried (golden brown, nice and crispy, and often called egg rolls) or non-fried versions (transparent in color and served cold). Either way, they tend to be filled with combinations of noodles, shrimp or crab, shredded carrot, mushrooms, bean sprouts, fresh cilantro, and even bean […]

Low-Sodium Collard Sandwich Wrap

It usually starts with a big flappy sheet of lavash or a soft tortilla. Those flat, towel-like breads that so easily twist and snuggle around your sandwich fillings. And while I’ve bought salt-free lavash and no-sodium corn tortillas before, they are either special grocery store items that only show up once in a while (lavash) or they tend to crack and break apart when you roll them (tortilla). Which means a sturdy, low-sodium sandwich wrap is difficult to make for a simple Wednesday lunch. Le sigh. But you didn’t think I was going to give up that easily, did you? […]

Kohl Slaw

It’s officially day two of the kohlrabi fest and today, we’re mixing up something quick and simple: Kohl Slaw. It’s raw, it’s juicy, it’s full of flavor, and no salt. And this would be a stellar dish to bring to any potluck or BBQ you plan to attend this weekend. You only need two bulbs of kohlrabi, two pears, an orange, and maybe a little spice to feed a whole army. Of eight or ten people. So get this low-sodium kohl slaw marinating and chow on. Ingredients 2 kohlrabi bulbs, antenna and bottom rough spot removed 2 pears Juice from […]

Salt and Stove-Free Pasta

Hi! What did you do this weekend? I set my oven on fire. Yeah. I really did. I meant to make chips. I made a huge mess instead. And I’m pretty sure I’m inhaling tons of chemicals as I’m writing this. If anyone has advice on cleaning this thing out, please let me know. But let’s talk about something with less charcoal flavor and more taste. While my range is taking a brief vacation, I started to think about no-cook meals. Ways that I could eat food full of vitamins and flavor without using any kind of flame. And that’s […]

Root to Tip: Radish Greens Salad

Radishes are bonkers. When they are raw, they are crunchy and peppery. When they are roasted or cooked in a frying pan, they turn juicy and sweet. And I love using them in place of potatoes for hashes, salads, or a quick snack. But I recently realized that I’ve been quite rude with my radishes, always paying attention to what’s below instead of looking above their shoulders. I mean, if some guy treated me that way, you’d better believe they’d get a reminder that there’s more to this package then some sturdy roots. So yesterday, with two bushels of radishes […]

Hot Pockets

It is true that the easiest way to lower your sodium is to cut out the prepared, packaged items from your diet. But it is false that home-cooked meals, made from scratch, have to be costly, time-consuming, and exhausting to create. Now, I’m not saying your assumption is wrong, because many dishes, like making your own mole sauce, could put you into an ingredient-induced coma for weeks. But thanks to inventions like the slow cooker and immersion blender, you can make flavorful, low sodium meals in the time it takes to order a pizza. For this particular story, let’s just […]

Biting Mr. Bittman: Succotash in Disguise

It’s officially summer! And between a few warm afternoons in San Francisco (made even more spectacular by parades and baseball games) and now the sweltering heat of the New York City streets (yes, I’ve left the best coast for the east for a quick work/pleasure getaway), I’m slapping on sunscreen, putting on my jumper, and soaking in all that this season has to offer–which above all else includes perfectly ripe, summertime produce. Two of the poster children for this season’s pantheon of vegetables include corn (yum) and summer squash (yummer). And when you put them together, you have a dish […]

Lemon Meringue Pots

Ok, before we even start this post, I have to ask.  Does anyone else see a baboon in the picture of the lemon meringue above?  Or perhaps Simba from the Lion King? It is kind of like a sighting of the Virgin Mary, but without any religious implications or unexpected media attention. But perhaps this is a forewarning of one, truly wild dessert…so with that in mind, off we go. For the Mom’s birthday dinner menu, I was given three simple, low sodium requests: (1) risotto cupcakes, (2) juicy lamb, and her ultimate, favorite dessert, (3) lemon meringue pie. As […]

Hi Ho Hummus

As we continue our journey through Moroccan cuisine, there is one Mediterranean staple that cannot be left off the menu: hummus and pita bread. Lucky for my blogger friends and I, the ladies from Farm & A Frying Pan whipped up a mean batch of both. Now, if you are anything like me, you have tried to make hummus many times.  Whether you decide to eat it as dip or slather on a sandwich, hummus is the perfect quick fix for a lunch or pot luck party. And with five simple ingredients – chickpeas, lemon, tahini, garlic, and parsley – […]
