2013 Love Your Heart Recipe Rally

Let’s begin with the facts and the numbers, because that’s always a very good place to start: The recommended daily sodium intake for a healthy American is 2,300mg, which equals 1 teaspoon of salt The recommended daily sodium intake for over 50% of adults (due to health problems, age, and other needs) is 1,500mg, which equals just over 1/2 teaspoon of salt Nine out of 10 Americans (that’s 90%) eat almost double the recommended daily intake, averaging over 3,500mg per day (and if you really consider the soy-sauced sushi, chorizo burrito, and milk swamped cereal…that number climbs even higher and adds […]

Low-Sodium Inspiration Pizza

Inspiration. For me, it comes from cravings. From menus. From other people’s dinners. From smells. From pictures in magazines. From trips elsewhere. From ingredients that are past their prime. From questions sent in by you. From dreams I have about cooking. From prepared food at Whole Foods. From television cooking contests. From websites like this. And blogs like that. From childhood memories. From the determination to turn the word “no” into a “yes.” From the season and what’s in season. And did I mention cravings? Yeah, those inspire me too. Low Sodium Taquitos

This is a Taquito tower. These are two taquitos, spooning side by side. And this was all that was left after the photo session.   Here’s where the story begins: I’m eight. I’m hungry. And all I want to eat is a soft taco filled with spicy meat, crispy shreds of lettuce, cheese, and sour cream. Fast forward twenty years, and not much has changed. Except I’m taller. As a Bay Area native, eating Tex Mex was just part of life. Like believing in Santa (even as Jew), learning how to drive, or electing celebrities as Governor. If there was […]

Queso Fundido

Hello friends, as of late and longtime. This week we are training for the big event on Sunday – the Super Bowl – and we are starting with a dish that is loosely dedicated to Cheese Heads across the nation. Today, we are making a dip that will satisfy low sodium eaters and salty snackers alike. Today, we are putting the “o.k.” in queso and the “fun” in fundido. Traditionally, queso fundido is a creamy blend of cheeses that includes tomatoes, chorizo, and peppers and is often served with tortilla chips. So to make it low sodium, I needed to […]

Homework and Kimchi Pancakes

What you see before you is a bonito flaked Kimchi Pancake made by Namu at the SF Ferry Building Thursday street cart Farmers Market. And this, my salt-free friends, is a foursome of salty but succulent duck sliders from Tilth restaurant in Seattle. And if turf is not your thing, then behold! A crisp skate wing with frothy chorizo/clam broth from Redd in Napa will do the trick. Or maybe your taste buds want to travel and they’re ready to hop on a plane and try some real pad thai from a market in Thailand. Before you commit me to […]
