Cucumber Baguette Sandwiches

I’m totally obsessed with this idea. It’s genius. It’s hearty. It’s healthy (I mean, it’s pretty much a salad in sandwich form). It’s easy to make and easy to make with your own flare. It’s gluten-free. It’s low-sodium. It can easily be made vegetarian, if you’re into that. If you’re looking for something explosive, make this spicy mayo. Mix these two ingredients together: a 1/4 cup of the no-sodium mayo and a 1/2 teaspoon of the no-sodium chili paste. Then dip something, like sliced bell peppers or cauliflower chunks, into it. Bite, chew, eat. And taste the fire. Serious fire. A few interesting things happened this morning. I lugged every piece of heavy cooking equipment out of the cabinets. Food processor. Stand up mixer. Blender. I covered my kitchen in flour. Yesterday, the CDC (and NPR) released one of the most comprehensive reports on the origins of America’s high sodium intake. Turns out it can be boiled down to ten popular foods. What comes as a surprise to most is that sodium doesn’t just exist in that shaker. Or that bottle of soy sauce. Or on top of French fries.
